  • 1 lb rice
  • 3 large eggs (2 for rice, 1 beaten for coating)
  • 0.3 lb grated Parmesan cheese
  • 0.8 lb ground beef
  • 0.3 lb ground chicken
  • 1 onion onion, chopped
  • 1 stalk celery, chopped
  • 0.3 tsp sage
  • 1 tsp oregano
  • 1 tsp salt and pepper to taste
  • 0.5 cup white wine
  • 1 cup flour, for coating
  • 1 cup dried breadcrumbs
  • 2 cup oil for frying

    Cook the chopped onion and celery with a spoonful of oil in a pan over moderate heat.

    Add the beef, chicken, sage, oregano, salt, and pepper; cook, stirring constantly. Add white wine.

    Meanwhile, boil the rice in salted water. When cooked, add the grated Parmesan and 2 eggs. Mix well. Let cool.

    When the rice is cold, put a spoonful of rice in your left hand, add a teaspoon of the meat mixture, and complete the ball with another spoonful of rice. Form into a ball about the size of a small orange.

    When all balls are formed, roll them in flour, then dip in beaten egg, followed by breadcrumbs.

    Fry in boiling oil deep enough to completely cover the balls until golden brown.

    Remove with a slotted spoon and place on paper towels to absorb extra oil. Keep warm in oven until ready to serve.
