Applesauce-Carrot Cake

- 1 cup white flour
- 1 cup whole-wheat pastry flour
- 2/3 cup sugar, can use 1/2 cup raw unfiltered honey
- 2 tsp baking soda
- 2 tsp cinnamon
- 0.5 tsp nutmeg
- 0.8 cup unsweetened applesauce
- 0.3 cup Virgin Olive oil
- 3 large eggs
- 3 cup coarsely grated carrots

2. In a small bowl combine the applesauce, oil and eggs;

add them to the flour mixture stirring until the

ingredients are well blended. Add the carrots and mix.

Pour the batter into a greased (spray with Pam) 9" tube

pan.

3. Bake the cake in a preheated 350 degree oven for about

one hour and ten minutes, or into a toothpick inserted in

the thickest part comes out clean. Set the cake pan on a

wire rack for 5 minutes, then turn the cake out onto the

rack to cool.
