Applesauce-Carrot Cake

  • 1 cup white flour
  • 1 cup whole-wheat pastry flour
  • 2/3 cup sugar, can use 1/2 cup raw unfiltered honey
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.8 cup unsweetened applesauce
  • 0.3 cup Virgin Olive oil
  • 3 large eggs
  • 3 cup coarsely grated carrots

    add them to the flour mixture stirring until the

    ingredients are well blended. Add the carrots and mix.

    Pour the batter into a greased (spray with Pam) 9" tube

    3. Bake the cake in a preheated 350 degree oven for about

    one hour and ten minutes, or into a toothpick inserted in

    the thickest part comes out clean. Set the cake pan on a

    wire rack for 5 minutes, then turn the cake out onto the

    rack to cool.
