Apple-Glazed Roast Pork

A slow-cooked pork loin roast resting on a bed of quartered apples, basted with a brown sugar and ginger glaze and cooked low for 10–12 hours.

  • 4 lb pork loin roast
  • 6 apples, cored and quartered
  • 0.3 cup apple juice
  • 3 tbsp brown sugar
  • 1 tsp ground ginger
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

    Rub roast with salt and pepper. Brown under broiler to remove excess fat; drain.

    Place apple quarters in bottom of crockpot. Place roast on top of apples.

    Combine apple juice, brown sugar, and ginger; spoon over roast to coat top surface.

    Cover and cook on LOW 10–12 hours until done.
