Apple And Custard Pie
Ingredients
- 1 cup all-purpose flour
- 1 pinch salt
- 0.3 cup sugar, divided (2 tbsp + 1/4 cup)
- 1/3 cup lard
- 2 tbsp ice water
- 2 tbsp butter
- 1 cup light brown sugar
- 5/8 tsp ground cinnamon, divided
- 2 lb Granny Smith apples, peeled, cored and sliced 1/4-inch thick
- 1 cup heavy cream
- 1 large egg yolk
- 0.5 tsp pure vanilla extract
- 1 cup sweetened whipped cream for serving

Make pie dough: combine flour, salt, and 2 tablespoons sugar. Work in lard with hands until mixture resembles coarse crumbs. Add ice water 1 tablespoon at a time. Form into a smooth ball, wrap in plastic, and refrigerate 30 minutes.

In a large sauté pan over medium heat, melt butter. Stir in brown sugar and cook 1 minute. Add 1/2 teaspoon cinnamon and apples. Sauté 3 minutes. Turn into a deep-dish 9-inch pie pan.

Roll out dough into a 12-inch circle, 1/8-inch thick. Gently place over pie pan and crimp edges. Make a 1-inch circle hole in the center with a sharp knife.

Bake at 350°F for 15 minutes.

Whisk remaining 1/4 cup sugar, cream, egg yolk, and vanilla. Pour custard through the hole in the pie. Return to oven and bake 30 more minutes until custard is set.

Cool completely. Sprinkle top with powdered sugar and serve with whipped cream.
