  • 1 cup all-purpose flour
  • 1 pinch salt
  • 0.3 cup sugar, divided (2 tbsp + 1/4 cup)
  • 1/3 cup lard
  • 2 tbsp ice water
  • 2 tbsp butter
  • 1 cup light brown sugar
  • 5/8 tsp ground cinnamon, divided
  • 2 lb Granny Smith apples, peeled, cored and sliced 1/4-inch thick
  • 1 cup heavy cream
  • 1 large egg yolk
  • 0.5 tsp pure vanilla extract
  • 1 cup sweetened whipped cream for serving

    Make pie dough: combine flour, salt, and 2 tablespoons sugar. Work in lard with hands until mixture resembles coarse crumbs. Add ice water 1 tablespoon at a time. Form into a smooth ball, wrap in plastic, and refrigerate 30 minutes.

    In a large sauté pan over medium heat, melt butter. Stir in brown sugar and cook 1 minute. Add 1/2 teaspoon cinnamon and apples. Sauté 3 minutes. Turn into a deep-dish 9-inch pie pan.

    Roll out dough into a 12-inch circle, 1/8-inch thick. Gently place over pie pan and crimp edges. Make a 1-inch circle hole in the center with a sharp knife.

    Bake at 350°F for 15 minutes.

    Whisk remaining 1/4 cup sugar, cream, egg yolk, and vanilla. Pour custard through the hole in the pie. Return to oven and bake 30 more minutes until custard is set.
