Antipasto Pasta Salad

  • 1 lb shell or bowtie pasta
  • 0.3 lb Genoa salami, chopped
  • 0.3 lb pepperoni, chopped
  • 0.5 lb Asiago or Italian sharp cheese, diced
  • 6 oz can black olives, drained and chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 ripe tomatoes, chopped
  • 0.8 cup extra virgin olive oil
  • 0.3 cup balsamic vinegar
  • 2 tbsp dried oregano
  • 1 tbsp Parmesan cheese, grated

Instructions

    Cook pasta in salted boiling water until al dente. Drain and cool under cold water.

    In a large bowl, combine pasta, salami, pepperoni, cheese, olives, bell peppers, and tomatoes.

    Prepare dressing: whisk together olive oil, balsamic vinegar, oregano, parsley, Parmesan, salt and pepper.

    Sprinkle Italian dressing mix over salad and mix thoroughly. Refrigerate.

    Just before serving, pour balsamic dressing over the salad and mix well.
