Anglaise Sauce

Classic vanilla custard sauce.

  • 1 cup Whole milk
  • 0.5 cup Heavy cream
  • 5 each Egg yolks
  • 0.3 cup Sugar
  • 1 tbsp Vanilla extract

Instructions

    Heat milk and cream until steaming.

    Whisk egg yolks with sugar until pale.

    Slowly pour hot milk into yolks while whisking.

    Return to pan and cook over low heat.

    Cook until sauce coats spoon, about 8-10 minutes.

    Strain through fine sieve.

    Stir in vanilla.

    Serve warm or chilled.
