Angel Hair with Balsamic Tomatoes

- 0.5 lb angel hair pasta, uncooked
- 5 Roma tomatoes, chopped
- 3 tbsp balsamic vinegar
- 1 tsp garlic, minced
- 1 tsp olive oil
- 0.3 cup fresh basil, chopped
- 1 tsp salt and pepper to taste
- 0.3 cup Parmesan cheese, freshly grated for serving

Combine chopped tomatoes, balsamic vinegar, basil, salt and pepper in a non-reactive bowl. Let stand for 10 minutes, stirring occasionally.

Sauté the minced garlic in olive oil in a large skillet over medium-high heat until lightly browned. Leave garlic in the skillet.

Bring a large pot of salted water to a boil and cook angel hair pasta for the recommended time (about 4–5 minutes). Just before adding the pasta, drain the tomatoes, reserving the juice.

While pasta cooks, heat the garlic skillet over high heat. Add the drained tomatoes and toss briefly just to heat through — do not overcook.

Drain pasta, immediately toss with tomatoes, and serve topped with freshly grated Parmesan.
