Andouille Smothered Beans

- 2 tbsp vegetable oil
- 0.5 lb andouille sausage, finely chopped
- 2 cup julienned onions
- 0.5 cup chopped celery
- 1 tsp salt
- 0.3 tsp cayenne pepper
- 2 tbsp chopped garlic
- 1 lb navy beans, rinsed, soaked overnight and drained
- 2 bay leaves bay leaves
- 10 cup water
- 0.3 cup chopped green onions

In a small stock pot, heat vegetable oil. Add andouille and render for 3 to 4 minutes.

Stir in onions and celery. Cook 2 to 3 minutes until vegetables begin to wilt.

Season with salt and cayenne. Stir in garlic, drained beans, and bay leaves.

Add water and bring to a boil. Reduce to a simmer.

Cook uncovered for 3 hours, stirring occasionally, until beans are soft and creamy.

Check and adjust seasonings. Remove bay leaves. Stir in green onions. Serve with fried catfish or over rice.
