Andouille Potato Soup

Hearty soup with andouille and potatoes.

  • 1 lb Andouille sausage
  • 4 medium Potatoes
  • 2 cup Chopped onions
  • 1 cup Chopped celery
  • 1 cup Chopped carrots
  • 4 clove Garlic
  • 6 cup Chicken stock
  • 1 bay Bay leaf
  • 1 tsp Thyme

Instructions

    Heat oil and brown sausage.

    Saute vegetables 5 minutes.

    Add potatoes, stock, bay leaf, and thyme.

  4. 4

    Simmer 25-30 minutes until potatoes are tender.

    Remove bay leaf.

  6. 6

    Season and serve hot.
