Almond Biscotti

  • 0.8 cup butter
  • 1 cup sugar
  • 3 large eggs
  • 3 cup flour
  • 2 tsp vanilla
  • 2 tbsp anise seed
  • 3 0.8 tsp baking powder
  • 1 cup chopped almonds (can substitute walnuts)

Instructions

    Cream butter, sugar and 1 tablespoon anise seed together.

    Add eggs and vanilla.

    Combine flour, baking powder and remaining 1 tablespoon anise seed. Add to cream mixture.

    Add nuts and mix in. Form cookie dough into 2 or 3 long thin rolls.

    Place rolls on an ungreased baking pan or cookie sheet. Bake at 350°F for 15 to 20 minutes, or until light brown.

    Remove from oven and cut diagonally into 1/2 to 3/4-inch slices.

    Put back in oven and bake an additional 10 to 15 minutes until lightly toasted.

    The biscotti will dry out slightly as it cools, giving it a crisp texture perfect for dipping.
