All Day Chicken

Chicken marinated overnight in orange juice, tomato paste, soy sauce, and brown sugar, then slow-cooked all day with mushrooms and mandarin oranges until fall-apart tender.

  • 4 lb chicken breasts and thighs
  • 2 tbsp frozen orange juice concentrate
  • 2 cup chicken stock
  • 1 tsp salt
  • 0.3 tsp black pepper
  • 0.5 cup tomato paste
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 clove garlic, minced
  • 1 dash allspice
  • 0.3 lb mushrooms, sliced
  • 2 tbsp butter
  • 11 oz canned mandarin orange sections, drained
  • 0.5 medium bell pepper, sliced
  • 0.3 tsp ground ginger
  • 3 tbsp cornstarch

Instructions

    The night before, mix marinade ingredients (OJ, stock, salt, pepper, tomato paste, soy sauce, brown sugar, garlic, allspice). Add chicken, seal, and refrigerate overnight.

    Transfer chicken and marinade to slow cooker. Add mushrooms, butter, bell pepper, and ginger.

    Cook on LOW for 8–10 hours until chicken is very tender.

    Mix cornstarch with cold milk and water; stir into cooker to thicken sauce.

    Add mandarin oranges just before serving. Serve over rice.
