Aioli

Classic Provencal garlic mayonnaise made by hand in a mortar, perfect as a dip or spread.

  • 4 garlic cloves
  • 2 egg yolks
  • 1 pinch salt
  • 1 cup plus 2 tbsp good-quality olive oil

Instructions

    Place the garlic in a large mortar and crush thoroughly.

    Add the egg yolks and incorporate well. Season with salt.

    Slowly drizzle in the olive oil, a little at a time, stirring constantly until all the oil is incorporated and the mixture is thick like mayonnaise.

    This yields about 1 cup of aioli. Refrigerate until needed.
