24 Hour Potato Salad

A layered salad of shredded cabbage, sliced potatoes, boiled eggs, onion, and bell pepper rings, all bound with generous amounts of mayonnaise and refrigerated overnight.

  • 1 head cabbage, shredded fine
  • 6 small potatoes, boiled and thinly sliced
  • 6 boiled eggs, thinly sliced
  • 1 onion, sliced in rings
  • 1 bell pepper, sliced in rings
  • 2 cup mayonnaise
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

    Place a layer of shredded cabbage in a round salad bowl, then a layer of potatoes, layer of sliced eggs, layer of onion, and bell pepper rings.

    Repeat layers. Between each layer, add a thin spread of mayonnaise, salt, and pepper to taste.

    Cover and refrigerate for 24 hours before serving.
