24 Hour Potato Salad
A layered salad of shredded cabbage, sliced potatoes, boiled eggs, onion, and bell pepper rings, all bound with generous amounts of mayonnaise and refrigerated overnight.

- 1 head cabbage, shredded fine
- 6 small potatoes, boiled and thinly sliced
- 6 boiled eggs, thinly sliced
- 1 onion, sliced in rings
- 1 bell pepper, sliced in rings
- 2 cup mayonnaise
- 1 tsp salt
- 0.5 tsp black pepper

Place a layer of shredded cabbage in a round salad bowl, then a layer of potatoes, layer of sliced eggs, layer of onion, and bell pepper rings.

Repeat layers. Between each layer, add a thin spread of mayonnaise, salt, and pepper to taste.

Cover and refrigerate for 24 hours before serving.
